Where are fat globules digested?
Fat globules are only partly digested in the gastric phase. Gastric lipase in human adults results in the release of 5–30% of the fatty acids. Most of the lipids are digested in the duodenum, once mixed with bile salts and pancreatic secretions (Armand et al., 1999; Phan and Tso, 2001).
